A Tasty and Healthy Weeknight Dinner Idea you Should Try Tonight

As mentioned previously, an easy hack is reducing the sugar in many of your baked goods. It won’t change the flavor much but it can help you to eat healthier. One of my favorite go-tos for a simple but light supper is fruit with muffins. Here are a few of my favorite muffin recipes:

A friend of mine made it something of a tradition — “Monday Muffin Madness” — every Monday night she made a muffin supper (along with fresh fruit and other goodies) for her family. You can mix it up by making a variety of muffins, and freezing some for later, or make them fresh each week (or as often as you’d like them), but I just love making muffins since they are easy to whip up, are tasty and healthy, and are even easy to eat on the go.
